Tabouleh in my opinion is the mother of all salads! Made primarily with fresh parsley, bulger wheat, fresh vegetables, olive oil, lemons juice and fresh herbs which makes it the healthiest and testiest salad in the world!
Tabouleh (تبولة) was one of my favorites things to eat while I was younger and still is to this day. I can easily eat it everyday because it is so refreshing and nourishing. It's an immune system booster because it's packed with antioxidants, healthy fats, fiber, and complex carbohydrates.

We grew up with my grandparents living with us in the same home. My Lebanese grandmother made #tabbouleh almost every day. She always saved me a little bowl if I wasn't home since she knew how much I loved her tabbouleh. My mother was trained by my grandmother (her mother in law) who is 100% #Lebanese so a lot of our dishes are a mix of #Syrian and Lebanese flavors. My Mom's mom was also Lebanese.

Why do I call it imperfect? Let me tell you a little story about that. In the Middle East, no matter how you make your Tabouleh, there will always be someone who is going to say " Your tomatoes are too big" or " you've added too much bulger" or "your parsley still has stems" etc... no one will ever make the perfect Tabouleh because our culture will always judge! I make mine the way my Lebanese grandmother used to make hers. She will literally whip it up in 5 mins and it was the tastiest Tabouleh I have ever had. Her tomatoes weren't as small, her parsley wasn't as perfect, but it was made with LOVE and that's what matters. Miss you Teta.
Here is what you need:
3 Italian parsley bunches - leaves chopped small & stems removed
3 Tomatoes on the vine - diced very small
1 small yellow onion - diced small
1/4 cup dried #1 bulger - soaked in water
Handful of Fresh Mint - chopped (Dried mint can be used as an option)
2 lemons - juiced
3/4 cup Olive Oil
Salt & Pepper to taste

Tip:
This is an excellent tip. Add the black pepper to the onions as you are dicing. It will infuse the flavors together for an amazing taste in the Tabouleh!
